Apple and grape tart with shortcrust pastry, with no added sugar, sweetened with OK Gold.

First of all, prepare the pasta:
Make a well in the flour and add OK GOLD; add the butter and rub in until the mixture resembles coarse breadcrumbs.
Pour in the water and vinegar and mix everything together quickly.Divide the dough into two, wrap in cling film and leave to rest in the fridge for an hour.

For the filling:
Cut them into cubes and add the lemon juice.
In a bowl, mix the apple cubes with vanilla, OK GOLD and the previously toasted pine nuts.
Melt the butter and add the mixture, then cook until the apple is caramelised.Mix the maize flour with a few tablespoons of water, pour into the pan with the grapes and cook for a few minutes.
Leave the mixture to cool. -

Assembly:
Take the dough and roll it out into a round shape.
Grease a baking tin, line it with one of the two discs of dough and prick the pastry all over.
Pour in the apple and grape filling, then cover with the second disc of dough, sealing the edges well.Make some cuts on the surface of the tart, brush with water mixed with OK GOLD and bake at 180°C for 45 minutes.
