A light sponge cake with no added sugar, sweetened with OK Green and enriched with inulin Benevia.

Combine the eggs with the ‘OK Green’, the flavourings and the lemon juice. Heat in a bain-marie, stirring constantly, until the mixture reaches 45°C, then whisk at high speed for about 10 minutes until the mixture is glossy and fluffy. Gradually stir in the lukewarm melted butter.

Sift the flour, inulin, baking powder and any cocoa twice. Add the dry ingredients in three batches, folding them in from the bottom upwards.

Pour into a lined 20 cm cake tin and bake in a preheated conventional oven at 170°C for about 30 minutes (test with a skewer). Turn out of the tin and leave to cool upside down on a wire rack.
