Panna cotta with no added sugar and a low glycaemic index, sweetened with OK Gold.
Procedure

Soak the gelatine in cold water.

Pour the cream into a small saucepan, add OK GOLD and the vanilla essence (or vanilla pod), then place on the hob.

When the cream is almost boiling, squeeze out the gelatine and add it to the cream, stirring well to combine.

Pour the panna cotta into the glasses.
Chill and leave to set for at least 4 hours. -

Garnish the panna cotta with your choice of toppings.
Here are a few examples:
– fresh strawberries drizzled with lemon juice
– a wild berry compote cooked with OK GOLD
– melted dark chocolate
or any other ingredient of your choice.
