Wholemeal biscuits with no added sugar, high in fibre and with a low glycaemic index, sweetened with OK Green.
Procedure

Sift the flours, baking powder and salt. Rub in the cold butter, cut into cubes, until the mixture resembles fine breadcrumbs.

Beat the egg with the milk, OK Green and flavourings; mix into the flour until the dough comes together. Add the chocolate chips. Shape into a ball and leave to rest in the fridge (preferably for 12 hours).

Roll out the shortcrust pastry to a thickness of 6–8 mm, cut out the biscuits and place them on baking paper.

Bake in a conventional oven at 170°C for about 15 minutes. This makes about 30 biscuits.
