A refreshing citrus mousse with no added sugar, sweetened with OK Gold.
Procedure

First, make the cream.
Squeeze the lemons and oranges and measure out 125 ml of juice from each. -

Pour the OK GOLD and the flour into a small saucepan, stirring well with a whisk, then add the juices whilst continuing to stir.

Place on the hob and cook, stirring constantly, until the cream reaches the desired consistency.
Turn off the hob, leave the cream to cool slightly, then cover the saucepan with cling film until it has cooled completely. -

Once the cream has cooled completely, pour the fresh cream into a large bowl and whip it until stiff peaks form using an electric whisk.

Next, take the cream, mix it a little with the whisk and add it to the whipped cream, continuing to whisk.

The sugar-free mousse is ready.
To serve, pour it into small bowls whilst it is still cold. -

To garnish, add a few mint leaves or some lemon zest.
