Custard with no added sugar, low in sugar and carbohydrates, sweetened with OK Green.
Procedure

Heat the milk with the vanilla pod and lemon zest until it comes to a gentle simmer.

Add the OK Green and the vanilla pulp to the egg yolks, then add the starches and inulin, which have been mixed together.

Strain a third of the milk into the egg yolk mixture, then add the rest.

Return to the heat over a medium flame, stirring continuously until the temperature reaches 85°C.

Pour into a baking tin, cover with cling film, and leave to cool in the fridge.
