A tart made with wholemeal shortcrust pastry and jam with no added sugar, sweetened with OK Gold.
Procedure

Crack the eggs into a bowl, add the ‘OK Gold’, the vegetable oil and the baking powder, and mix with your hands, adding the flour a little at a time.

When the dough starts to come together, tip it out onto the work surface and continue kneading with your hands until it has a smooth consistency and no longer sticks to your fingers.

Grease and flour a 28 cm diameter baking tin.

Using a rolling pin, roll out the shortcrust pastry directly onto a sheet of baking paper. Turn the rolled-out pastry out onto the baking tray and press it firmly against the base and sides. Then gently peel off the sheet of baking paper and, using a knife, trim the edges, removing any excess shortcrust pastry.

Take the jam and spread it over the whole surface.

Use the leftover shortcrust pastry to roll out another sheet, cut it into thin strips and arrange them on the tart to create the classic decoration.

Place in a conventional oven at 180°C and bake for about 40 minutes.
