Meringues with no added sugar, a low glycaemic index and a high protein content, sweetened with OK Green.
Procedure

Whisk the egg whites with the lemon juice until frothy. Gradually fold in the mixture ofOK Greene, inulin and cornflour, one tablespoon at a time. Whisk until stiff peaks form.

Pipe the meringues using a piping bag.

Bake in a preheated conventional oven at 90°C for 60 minutes; switch off the oven and leave for a further 30 minutes with the door ajar. They must be dry on the inside as well.

Optional: dip the tips into melted dark chocolate at 31°C and leave to set on baking paper. Excessive consumption may have a laxative effect.
