No-bake wild berry cheesecake, with no added sugar and a source of protein, sweetened with OK Gold.
Procedure

Pour the mixed berries into a small saucepan, add OK GOLD (30 g) and the lemon juice. Heat on the hob for a few minutes, stirring occasionally (the cooking time will be a little longer if using frozen berries).

Leave to cool completely.

Place the gelatine in a cup and soak it in cold water.

Blend the biscuits with the butter and pour the mixture into a springform tin,
smooth the mixture out evenly and place the tin in the fridge. -

In a bowl, mix together the cream cheese, the Greek yoghurt and the remaining OK GOLD (40 g).

Pour in the liquid extracted from the berries and blend everything together until the mixture is creamy.

Squeeze out the gelatine leaves and place them in a small saucepan with the milk; heat for a few seconds, stirring until dissolved.

Pour into the red fruit mixture and stir well to combine everything.

Pour the berry cream into the cake tin and leave to set in the fridge for at least 3 hours.

Put the berries you’ll be using for decoration in the fridge as well.

Once the required time has elapsed, open the cake tin.

Take the rest of the berries and spoon them over the cheesecake.
