A classic tiramisu with no added sugar, featuring a mascarpone cream sweetened with OK Gold.

Whip the fresh cream until stiff.

Separate the egg whites from the yolks and whisk the egg whites until stiff.

Using a whisk, beat the egg yolks with OK GOLD, then add the mascarpone to this fluffy mixture and mix well.

Add the cream, stirring with a spatula using upward strokes to incorporate air.

Finally, fold in the stiffly beaten egg whites and continue stirring until you have a light, fluffy mixture.

Make some coffee and get an ovenproof dish ready.

Dip the ladyfingers in the coffee, arrange them in your chosen dish and cover them completely with a very generous layer of cream.
Make another layer of coffee-soaked ladyfingers and another layer of cream until the dish is full. -

Place in the freezer for a few hours and finish with unsweetened cocoa powder before serving. Serve soft or frozen, as you prefer.
